Hi dweeby, thanks for your kind observations. From your detailed questions, its obvious your have played the game.
I will try to provide some answers and discussion. I'm a math guy and always searching for a way to apply math to the chaos that a Crap shoot is. So since I know that 1 in 6 rolls should be a Seven, I should be able to get in 4 rolls, take my money and watch from the sidelines. I want a number of small wins to accumulate into a large win.
In my example Video I was using $50/60 bets, you can make yours $5/6. $25/30 or $500/600 as your bankroll dictates.
My Hit It & Quit It style calls for re-posting the same Place bet if it hits. So you start with a Place 6 for $6, it hits, you stack another $6 on that Place 6, putting "Pressure" on the Place 6 which now has a $12 bet. So Yes, I am always pressing my original bet, using the "House Money" from my winning payout. Then, after the 4th roll, take ALL the place bets down and try to dodge the Seven.
Then we still have the Pass Line Bet with 2X Odds in place. The House Rules everywhere are strict that you cannot take down a Pass Line Bet, however you can raise lower or remove your Pass Line Odds bets any time. But the question is - should I?? Thats going to be up to you, whether to leave the Odds bet up. If the shooter rolls numbers that did not pay, I'm taking the Odds down expecting a Seven.
On exceptions to the rules, if a shooter is rolling great numbers I might leave up my Place Bets 1 or 2 more rolls, or take down the 5 & 9 and leave the 6 & 8 up. Here we are really just guessing and have left the rule book on the bench.
Two caveats of the rules of Hit It & Quit It style: 1) If the shooter's First Three Rolls are Crap and do not pay, immediately take down every bet you can as the Seven is coming for sure.
2) If the point is 4 or 10, it takes longer to resolve usually and you can risk a fifth roll with Place Bets up.
Now about putting Place bets up again. We all want to avoid missing out on the 20-25 roll pass that you can really profit from. My experience on the live and computer game is that as soon as you go back up, the Seven comes!

One thing you can do is to make your Place Bets (or re-up) at the most minimal level if you feel a long roll coming.
Your statistical observation is so accurate, 95% of the passes are 2-6 rolls. Right! Take the mean average of that - its 4 rolls. Genius! Yeah the Hit It & Quit It style might miss you out on the one great 15-25 roll pass, but those are so very rare. The whole meaning of the Hit It & Quit It style is just to have a consistent playbook and stick to it. The math will work out in the end.

Thanks for your excellent questions.
