Different Houses have different rules for their dealers to abide by. It sounds like this was a House Rule rather than a lazy dealer or poor service. I could see that if the players wanted to Color Up their Rail holdings every 5 minutes, it would slow the game down. For sure, the dealers are very aware of whats in your rail and will pay out denominations that make sense for what you are holding. Now if you had kept all those reds in your rail, they likely would have paid you in greens. They dont know what in your pockets

I played a heck of a session recently. I bought in a $5 min table with $100 and kept hitting numbers. On my first roll, I rolled 26 times!!!
